Pumpkin Bread

There are dozens of pumpkin bread recipes to be had. But in my humble opinion, this one (from my mother-in-law) trumps them all...at least of the ones I've tried.


You may also want to try our chocolate chip pumpkin cookies.

Pumpkin Bread

Makes 8 mini loaves or 3 9-inch loaves*

2 cups pumpkin (not pumpkin pie mix!)
4 eggs
3 cups sugar
1 cup vegetable oil
2/3 cup cold water
3 1/2 cups flour
1/2 teaspoon baking powder
2 teaspoons baking soda
1 1/2 teaspoons salt
1 teaspoon nutmeg
1 teaspoon cloves
1 teaspoon cinnamon
  1. Preheat oven to 325 degrees F. Grease and flour loaf pans.
  2. In a large mixing bowl, beat together pumpkin, eggs, sugar, oil and water.
  3. In a separate bowl, combine dry ingredients. Add to pumpkin mixture and beat until smooth. Pour into loaf pans.
  4. Bake 55 minutes for small loaves or 1 hour 15 minutes for large loaves, or until toothpick inserted into the center comes out clean. Cool on wire rack.
*I made 2 large loaves and 11 muffins. For some reason I didn't think to remove some batter from the large loaves for the 12th muffin...
