Warm Cabbage Apple Salad

There's something about cooked cabbage that I just love. A good coleslaw is always appreciated, but if you really want to do me in, give me an egg roll stuffed with shredded cabbage or maybe some hearty borsch. And since I've been craving cabbage lately, I found this apple-cabbage salad to be pure fall perfection.

1/2 medium head red cabbage, cored and thinly sliced
1/2 small onion, thinly sliced
1 to 2 tart apples,* thinly sliced
1 tablespoon butter
1 tablespoon olive oil
1/8 teaspoon salt, or more to taste
1 tablespoon apple cider vinegar
  1. Heat a large pan on medium high heat and add the oil and butter. Saute the onion 2-3 minutes and add cabbage, apple, and salt. Cook on medium heat about 15 minutes, or until the cabbage is tender. 
  2. Just before removing from heat, add vinegar and let cook about 2 minutes. Transfer to a bowl and serve. 
Note: If you add the apples with the cabbage, they will turn purple. Alternatively, you can cook the apples with the tablespoon of butter in a separate pan about 10 minutes, or until the apples are soft, but not mush. Add them in with the vinegar. 

*I recommend Empire, Granny Smith, or Cortland.
