Warm Cabbage Apple Salad

1/2 medium head red cabbage, cored and thinly sliced
1/2 small onion, thinly sliced
1 to 2 tart apples,* thinly sliced
1 tablespoon butter
1 tablespoon olive oil
1/8 teaspoon salt, or more to taste
1 tablespoon apple cider vinegar
- Heat a large pan on medium high heat and add the oil and butter. Saute the onion 2-3 minutes and add cabbage, apple, and salt. Cook on medium heat about 15 minutes, or until the cabbage is tender.
- Just before removing from heat, add vinegar and let cook about 2 minutes. Transfer to a bowl and serve.
Note: If you add the apples with the cabbage, they will turn purple. Alternatively, you can cook the apples with the tablespoon of butter in a separate pan about 10 minutes, or until the apples are soft, but not mush. Add them in with the vinegar.
*I recommend Empire, Granny Smith, or Cortland.
