Chocolate Confetti

This post is written by Brad, Caroline's husband. I am guest posting to add a fabulous chocolate treat because Caroline likes to pretend that she doesn't know how to make it, even though it is about the easiest thing on earth to make.

I come from a family of chocohalics and it was a family favorite. I mean how can you go wrong with chocolate and peanut butter. The only warning is that it can be as addictive as it is rich. In reality the marshmallows are to help tone it down, so that you can eat more than one bite. Add more to make it less rich or fewer to just enjoy the chocolaty goodness.
Chocolate Confetti

¼ cup butter
½ cup peanut butter
1 chocolate chips
1-2 cups miniature marshmallows

  1. Prepare an 8x8 inch baking dish by lining it with either waxed or parchment paper; set aside.
  2. Melt butter and peanut butter together in a small pan over low to medium heat. Once they are combined, add the chocolate chips and stir until melted. Take the pan off of the stove and stir in the marshmallows.
  3. Pour the chocolate mixture into the prepared baking dish; spread the mixture out so it is fairly level. Cover and put in freezer until solid. Once the chocolate confetti is frozen solid, cut into bit size pieces and serve. *Best eaten about 20 minutes after it is pulled out of the freezer- still solid, but not so hard it is going to break your teeth!

As a member of Brad's chocoholic family I can vouch that it is indeed addicting!

For a yummy variation try adding some nuts - although Brad would disagree.

Did you add one or two cups of marshmallows to this batch? Just to give me an idea how much I would want. It looks really good. Us Rather girls are good at "not knowing" how to do things that we know our husbands do really well. We have to let you look good at a few things:)

I would estimate about 1 1/2 cups in this batch. I prefer it with more marshmallows, because it really is quite rich.

You are right; this is easy to make. I mixed some up this afternoon. I'm with Kelly, though. I think next time I'll add nuts or use chunky peanut butter.
