Oatmeal-Chocolate Chip Cookies

1 1/2 cup brown sugar
1 cup butter, softened
1 teaspoon vanilla
1 egg
2 cups quick oats
1 1/2 cups flour
1 teaspoon soda
1/4 teaspoon salt
1 cup chocolate chips
- Preheat oven to 350°F.
- In a large bowl, beat sugar and butter together until light and fluffy. Add vanilla and egg.
- In a separate bowl, combine oats, flour, soda and salt. Add to butter mixture and stir just until blended.
- Stir in chocolate chips.
- Drop onto ungreased cookie sheets and bake 9-11 minutes or until light brown.

We regularly bake oatmeal chocolate chip cookies. We definitely have a favorite recipe. I'll give this one a try and give you my comparison.
These give oatmeal cookies a good name. Delicious!
The cookies look wonderful, and the stacking is impressive. But I know a four-year-old (ACRL) who could easily build a stack twice that high. He's very experienced.
