Mango Lime Fool

A "fool" is a fruity dessert usually made with cream and/or yogurt and some type of pureed fruit. Why it's called a fool is beyond me, but it's the perfect fast and refreshing dessert for summer.

1 15 oz can sliced mangoes
zest of 1 lime
juice of 1 lime
2/3 cup heavy whipping cream
6 tablespoons plain yogurt
2 tablespoons sugar
  1. Drain almost all the juice from the mangoes (leave about 1-2 tablespoons). Transfer them to a blender or food processor. Add sugar, lime zest and juice. Blend until smooth.
  2. In a separate bowl, stir together the yogurt and cream. Mix until thick.
  3. Add mango mixture to the yogurt and cream and whisk until blended.
  4. Chill 1-2 hours. Serve in tall glasses with fresh raspberries.

This sounds like a healthier & combined version of a mango lassee / mango shake that you can order at almost any Indian restaurant. Madeline loves them! I buy mango sauce at Trader Joe's to cheat and always have the basics on hand and you just combine mango (canned, fresh, frozen, combo), plain yogurt, sugar, and water to taste and whirl in a blender. Whenever we make Indian food at home we always serve lassees (and the spelling may be different depending on what Indian restaurant you are at).
