Grilled Cuban Chicken

It's finally grilling season! Alas, I've misplaced my grill somewhere along the many moves we've made over the past year or so. But considering the very small space I call a kitchen and the lack of anything resembling air conditioning in my house, I'm sure I'll be making my way to the store for a new grill some time soon. Needless to say, I cheated with this recipe and didn't actually grill my chicken; I used my broiler instead. But I have followed my own directions in the past and actually grilled this chicken. It's even more delicious with a bit of flame broiled flavor to the meat.


This recipe also works great with pork. Try serving with a spiced black beans and rice (coming soon!), corn on the cob, and a green salad.
Grilled Cuban Chicken

2 tablespoons finely grated orange peel
1 teaspoon cumin
2 teaspoons roughly ground black pepper
1/2 teaspoon salt
2 garlic cloves, minced
2 tablespoons olive oil
4 small chicken breasts, washed and patted dry
  1. Heat coals or gas grill for direct heat.In a small bowl, combine all ingredients but chicken. Rub evenly on both sides of chicken.
  2. Grill chicken on medium heat about 8 minutes; turn and grill about another 8 minutes, or until the juice runs clear and meat is no longer pink in the center.

Our inexpensive grill did not survive the winter, so I cooked this in the broiler, too. It was really good. Thanks for the simple marinade.
