It's finally grilling season! Alas, I've misplaced my grill somewhere along the many moves we've made over the past year or so. But considering the very small space I call a kitchen and the lack of anything resembling air conditioning in my house, I'm sure I'll be making my way to the store for a new grill some time soon. Needless to say, I cheated with this recipe and didn't actually grill my chicken; I used my broiler instead. But I have followed my own directions in the past and actually grilled this chicken. It's even more delicious with a bit of flame broiled flavor to the meat.
This recipe also works great with pork. Try serving with a spiced black beans and rice (coming soon!), corn on the cob, and a green salad.
Grilled Cuban Chicken

2 tablespoons finely grated orange peel
1 teaspoon cumin
2 teaspoons roughly ground black pepper
1/2 teaspoon salt
2 garlic cloves, minced
2 tablespoons olive oil
4 small chicken breasts, washed and patted dry
- Heat coals or gas grill for direct heat.In a small bowl, combine all ingredients but chicken. Rub evenly on both sides of chicken.
- Grill chicken on medium heat about 8 minutes; turn and grill about another 8 minutes, or until the juice runs clear and meat is no longer pink in the center.

Our inexpensive grill did not survive the winter, so I cooked this in the broiler, too. It was really good. Thanks for the simple marinade.
