Grandma Jane's Buttermilk Pancakes with Blueberries*

2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons baking powder
2 tablespoons sugar
2 cups buttermilk
2 tablespoons oil
2 eggs
1 cup blueberries (optional)
- In a large bowl, whisk all dry ingredients together.
- In a separate bowl, combine buttermilk, oil and egg.
- Add buttermilk mixture to dry ingredients and mix just until combined (the batter will be quite thick).
- Scoop batter onto a hot, well greased griddle (try about 1/3 cup of batter for each pancake). Sprinkle a few berries onto each pancake before flipping.

I hate blueberries. I am not sure why, but I cannot stand them. Maybe its the nasty stem part, or perhaps its their horrid texture. I just do not like them one bit...in or on anything.

My colleague brought in some fresh blueberries today. A lot of fresh blueberries. I thought about cheating and using a mix to make pancakes with them, but I realized that would not honor the hand-picked fruit. Thanks for this very simple, delicious recipe.
People sound so shocked that these are good... but its Grandma Jane's recipe, of course they're good! She rocks, I grew up on these things they're the best there is. Ihop's got nothing on her.
