I've been on a hunt for a non "traditional" cookie, something a little different than your typical chocolate chip, or oatmeal, or plain peanut butter, but also something that wouldn't take me hours to make. And I think I've found it. All the reviews for this recipe claim the cookies (with a peanut butter filling- we made ours a chocolate filling) taste exactly like the Girl Scout cookie. Having never had the GS oatmeal-peanut butter cookie, I can't really say if they're right. But either way, they're really good and very sweet!

1 tablespoon butter
1/4 cup semi-sweet chocolate chips*
1 cup powdered sugar
1/2 cup smooth peanut butter
2-3 tablespoons milk
1/4 cup semi-sweet chocolate chips*
1 cup powdered sugar
1/2 cup smooth peanut butter
2-3 tablespoons milk
- Melt chocolate chips and butter together in a small saucepan on very low heat (or on a double broiler) or in the microwave (stirring frequently to prevent burning).
- In a small bowl, mix butter and chocolate chips with the powdered sugar, 1/2 cup smooth peanut butter, and the milk, 1 tablespoon at a time. The filling should be thick enough that when you bite into the sandwich, it doesn't ooze out.
- Spread filling onto half of the cooled cookies, then top with the other half to form sandwiches.
*The original recipe used a plain peanut butter filling. If you prefer, simply omit the chocolate chips and butter.

Really good! I needed a big glass of milk but I promise I could take a bath in that chocolate.
