German Apple Pancake

Josh (and Lindsey) have been our friends and neighbors for years. Lindsey is an excellent cook- her mashed potatoes have no rival- but Josh has also been known to whip up a few amazing dishes from time to time. Here's one that makes my heart flutter with anticipation. He says:



"I first ate this pancake at the Original House of Pancake in Chicago. And I loved it. When I came home, I started searching for something authetic, or at least close to the same taste. I found this recipe and decided it was close enough (if you want to try the real thing to compare, and you live somewhere in Utah, there's an Original House of Pancake in Sandy). We like to make these for a late Saturday morning breakfast. It's not good for the heart, but it's good for the soul." -Josh

German Apple Pancakes

5 tablespoons butter
1 cup flour
1 cup milk
6 eggs
1/2 teaspoon salt
3 tart apples, peeled (optional) and sliced or choppd
1 tablespoon cinnamon
1/4 teaspoon vanilla
1/2 cup brown sugar
1/2 cup white sugar

  1. Preheat oven to 425 degrees F. Melt 3 tablespoons butter in a 9 x 13 inch pan or two 9 inch pie pans.
  2. In a blender or large bowl, combine four, milk, eggs, and salt. When butter is completely melted, pour batter into the pan. Bake 10 minutes.
  3. Meanwhile, combine 2 tablespoons butter, cinnamon, vanilla, and apples in a small saucepan. Cook on medium heat for about 10 minutes, or until the pancake has risen about half-way up the pan.
  4. Remove pancake from the oven and pour apple mixture on top. Sprinkle brown and white sugar over the apples. Return the pan to the oven and bake another 15 minutes, or until the edges are light brown and have puffed up over the top. Remove from the oven and let cool a few minutes (if you let cool too long, it will deflate). Serve warm.

I make German pancakes regularly. However, I've noticed that my standard recipe seems more and more scant with our growing family. The addition of apples and cinnamon not only tasted good, but filled us all up, too.
